Halloween Cat Shapes
I need a halloween dessert…?
that looks impressive but also tastes incredible. It’s for a small halloween party every year and I usually do some version of a cake. One year I just died the icing orange and did a chocolate cake, one year i did a cake that was in the shape of a cat. So i’m up for anything, even if it takes a lot of work. I really like cakes, not so much cupcakes or cookies. Thanks!
It’s work, but not that much. And it can be done in stages over time. Here goes:
As a preliminary matter, you will need to make 1 recipe of marshmallow fondant. This is really easy, so don’t be scared and you can make it weeks in advance. Here is my best recipe for it. The only thing you want to do is add food coloring to the recipe. Just squeeze a bunch in. You can also buy it at any store, if you get scared.
1. bake a cake like a ball. To do this, all you do is pour 1/2 of any 2-layer cake batter in a round metal mixing bowl and bake according to directions. Then do it again (it makes two halves, which put together look round). You can also buy a soccer ball mold for about $10.00.
2. when cool, scoop out some of the insides of each half so you have, essentially, two “bowls” made of cake. The top bowl does not need to be super-scooped
3. buy or make a very thick bavarian cream (in a pinch you can use vanilla pudding). mix into it chunks of candy bars like butter finger and some jelly beans… anything that would taste good but look gross. Then, swirl in different food colors until you have a really gross look. You can also use brown butterscotch bavarian cream (which looks like barf but tastes like heaven). I sometimes add rice crispies.
4. take the creamy goo you’ve made and mound it into one side of the cake bowl (the deeper side). Since you have carved out the top, you can mound the goo pretty high. Then cover the goo with the other half of the cake. Use a knife to “clean up” any edges of your apple. You now have an “apple shape.”
5. with a melon baller, scoop out tiny shallow little “holes” in the cake (these will be the holes where the gummy worms come out).
6. You are now ready to frost your cake with your favorite buttercream. If you need a recipe for that, let me know. I have a swiss meringue buttercream that is pure heaven, but you can use any frosting you like. Frost the entire cake.
7. Once frosted, roll out your fondant and gently cover the frosted cake ball, smoothing it with your hands, and gently pressing the fondant into the little holes you made. Cut away the excess. If your fondant is covered with powdered sugar, you can spray it with a little vodka in a spray bottle at the end, and all that will disappear. You now have a giant red apple.
8. Put the gummi worms in the little holes you created, and use a piece of licorice or even a pretzel to make a stem.
9. You’re done. Cool and yummy and just a little gross.
Some tips:
1. Cake can be made in advance and frozen.
2. Whole cake can be assembled up to 3 days in advance if you use bavarian pastry cream instead of pudding. With pudding, because of it’s liquid content, assemble on the same day.
3. you can also put little spiders and things on the apple. I put a hypodermic syringe (unused, of course) that’s labeled ARSENIC sticking out of the top (needle part removed).
4. If you want, you can decorate the whole cake with frosting and leave off the fondant. Just use a thick layer of buttercream and be very careful about the smoothing process.
